This week’s quick meal idea is beef and broccoli. Our youngest daughter, Violet made it for us for supper, and the total time needed is just over 30 minutes.
Ingredients:
1 lb of shaved beef
1 lb of broccoli cut into florets.
2 Tbsp olive oil
2 tsp sesame seeds
1 tsp fresh ginger, grated (loosely packed)
2 tsp garlic, grated
1/2 cup of hot water
6 Tbsp low sodium soy sauce
3 Tbsp packed light brown sugar
1 1/2 Tbsp corn starch
1/4 tsp black pepper
2 Tbsp sesame oil
Instructions:
Start with making your sauce by combining fresh grated ginger, grated garlic, hot water, soy sauce, brown sugar, corn starch, black pepper, and sesame oil in a bowl.
Set that aside.
In a fry pan add 1 Tbsp olive oil and stir fry your broccoli until is the tenderness that you like, approximately 5-7 minutes.
Take the broccoli out of the frying pan and set it aside.
In your hot frying pan add 1 Tbsp olive oil and cook your shaved beef for around 5 minutes.
Add the sauce to the meat and simmer over medium heat for 3-5 minutes.
Sauce will thicken.
Add the broccoli to the meat and sauce and stir until it is well coated with sauce.
(OPTIONAL) Serve over rice.
